Key Elements to Consider for a Perfect Grilled Steak

Grilled meat is a tasty treat that is perfect for meals year round. There are many opinions about how to grill the perfect steak. At ABC Pool & Patio, we know about a few tips that will help you be the master of BBQ in Torrance, CA.
Choose the Right Meat
Half the secret to good grilling is choosing the right meat. Good meat is usually a little more expensive, but it is worth it in the end. There are many popular steaks including fillet, Rib-eye, T-bone, and sirloin that can be grilled well. The key is to choose a good piece of meat. Here are a few tips:
- Look for meat that is deep red. The reddish-pink variety are less fresh and brown spots indicate bruising.
- Look for meat with good marbling. Marbling means that there are little bits of fat throughout the muscle. Some cuts are inherently leaner, so they may not have as much. These include fillet, flank steak, and skirt steak. Also, look for meat with less silver skin on the outside.
When to Marinade
Different cuts of steak should be treated differently for the ultimate flavor experience. Some do better with marinades and others do better without. Cuts like Ribeye, porterhouse, or t-bone do better with just a simple seasoning job like salt and pepper. There is enough marbling in these cuts to deliver a tremendous flavor that is still juicy. Cuts like fillet typically do better with a light marinade because they are leaner and need some help to lock in tender, juicy flavor. Flank steaks and strip steaks also do well with marinades.
The Proper Technique
One of the most popular grilling techniques (for good reason) is to sear the meat over a high heat for a couple of minutes on each side and then move it to medium heat until it cooks to your desired “doneness.” This will take 4-8 minutes depending on the thickness. If the steak is less than one inch thick it is probably best to just use the high heat or you’ll risk overcooking.
